Why Carbohydrates Make You Fat
When I was at university I turned my body into a walking, talking biochemistry lab. I tried just about every combination of diets you could think of. I even went vegan for what was, indisputably, the worst month of my life. Eventually, I ended up sticking with a high fat, low carbohydrate diet.
I started the paleo diet about a year before I took a biochemistry course, but even then the biology made sense to me. However, my biochemistry education really cemented my conviction that I was on the right plan.
It all has to do with hormone regulation and insulin is probably the most important one in controlling your body composition.
Carbohydrate & Insulin Regulation
Insulin is a storage hormone that is released by your pancreas when there is glucose in the bloodstream. Glucose is toxic if it is not removed quickly as it will attach itself to proteins which can then start blood clots and other sorts of damage.
No matter how slow digesting a carbohydrate is, it is still broken down into glucose in the gut. So all of the things which claim to be nutritive grains really are nothing more than dolled up glucose. Which means that consuming them will trigger an insulin response in your body.
Now, once that glucose has been released into the bloodstream insulin can do three things with it:
- Store it in muscle in the form of glycogen
- Store it in the liver as glycogen
- Store it in fat cells
The liver can store about 100g of glucose while muscles can store in the range of 350-500g, depending on how trained you are. The average American male will eat 296g of carbohydrate per day. Combine that with a desk job where muscle glycogen is not consumed and you get a recipe for insidious fat gain as insulin can only store the glucose in fat tissue as glycogen stores are full.
I knew that moving from a high carb diet into a high fat diet was the right choice for me. Not only was the science validated in the classroom but it was the first time where I was not always stressed about calorie counting. I have never felt better in my life.
The high carbohydrate diet is a lie. Don’t fall into the trap.
